I personally prefer stamina to start with as it makes getting to out of reach places easier (exploration). That being said i do tend to sneak/avoid combat as much as possible, especially in the early game, so hearts arent as important for my playstyle. Having some of the power ups really helps you to get around and get all the shrines. The bird one I'd say is the most useful and easiest to get. There's at least one shrine I can think of you can't even get until after you do the divine beast in the area. Also, hearts are nice, but maxing out your stamina is where it's at.
